Water Temp readings

Can I ask does anyone know what the water temp gauges readings are? I mean the oil temps are written down for us but not the water:banghead:

what is operating temp?

100c I assume,

but how hot is 'red' 125c? 150c? I just want to figure out the range of temp we have to play with......
